Chicken Thighs in a Butter Sauce
Breakfast of Champions! or lunch or dinner or snack......
All you need is chicken thighs, Great Northern Larder Turkey seasoning, butter, a small onion, as much garlic as you like, some Mallorcan black pudding if you have it 😉 and salt & pepper (always!)
This is a fast cook, that is tasty and very satisfying. And a one pan only recipe which for me is an added bonus.
This recipe feels really indulgent and has a certain winter feel to it. I reckon if you added cream or parmesan cheese before serving it would be a real luxurious treat.
Here's the recipe:
• Skin on chicken thighs 800g
• Butter 30g
• 1 - 2 Tbsp Great Northern Larder Turkey seasoning (available on foodonfire.ie)
• 1 small brown onion diced
• 1 clove of Drummond House Garlic
• 30g Mallorcan black pudding or chorizo
• Salt and Pepper
Season your chicken with fine sea salt. We used some smoked sea salt.
Dry fry skin side down until crispy.
Turn thighs over once brown and crispy then add your butter, onion and black pudding/chorizo.
Add black pepper if you love it like us.
Cover with a lid and let cook for 10-15 mins, until the chicken reached an internal temperature of 73°c.
Serve with greens and eggs or eat it straight from the pan.
This would be a gorgeous outdoor BBQ cook.
Especially if you added cream to finish 😋
