Ooni or Roccbox Chicken Wings
We are the proud owners of a Gozney Roccbox and we have to say it makes the best chicken wings you will ever taste. The skin gets very crispy, but the meat stays moist although not as greasy as deep frying. Buy good quality meaty chicken wings and then follow the recipe below for buffalo heaven.
Dry the wings with a paper towel. Salt the wings. You can add our Hot Wings rub at this point if you like or you can wait until later. Leave the wings uncovered overnight in the fridge. This will dry them out and tighten the skin for extra crispiness.
The next day heat your Roccbox or pizza oven to full whack. If you haven't already done so liberally dredge your wings in Hot Wings or your rub of choice.
Add a touch of oil to a cast iron pan and pre-heat it in the oven. Do not leave it too long as it will get very hot - hot enough to take off the seasoning! Just bring it up to a nice cooking temp.
Add the wings to the pan and cook for 4 - 6 minutes or until they reach over 73c. If they are cooking too fast on the outside, you can remove the cast iron pan from the oven and continue cooking them using the residual heat of the pan. Make sure no little hands (or big ones) touch the cast iron pan as it will be very very hot.
While they are still hot lash lots of your favourite wing sauce on them. You can also add butter if you want a glossy finish.
