When someone wants to be negative about barbeque they usaully talk about burgers and sausages as if they were some sort of sin against live fire cooking. Not so. Burgers are the quickest and best way to make a cheap cut of beef like brisket tender and succulent. When you cook a burger you are exposing more of the meat to the smoke and flames for extra flavour. You also have more surface to season and getting that seasoning right is very important. Keep it simple with S.P.G. and then use sauce for sweet and heat.
